Baked Potato Casserole

Double Baked Potato Pan - this ooey, gooey, cheesy and fully loaded will leave you asking for more!

Ingredients

  • 8 potatoes about 4 kg
  • 8 ounces cream cheese, softened
  • 1/2 tbsp butter (1 stick)
  • 2 c spicy cheddar cheese grated
  • 1 pint sour cream
  • Chop 2 cloves of garlic
  • 1 1/2 teaspoons of salt
  • 1/2 teaspoon pepper
  • 1/4 c fresh onion
  • 6 slices of bacon cooked crispy, drained and crumbled to the top



Instructions


  1. Preheat oven to 350 degrees. Wash with oil, salt and pierce the potatoes and place on a baking sheet (or directly on the baking tray).
  2. Bake the potatoes for 1 hour and 15 minutes, until very soft.
  3. Peel and chop the potatoes in a large bowl with mashed potatoes.
  4. Add the cream cheese, butter, 1 cup cheddar cheese and sour cream.
  5. Stir well. Add the garlic, salt and pepper and stir again.
  6. Spray a 9x13 baking dish with baking spray. Place the mashed potatoes in the pan.
  7. Note: The stacked material can be covered with plastic wrap and cooled until baked.
  8. When ready to bake, preheat the oven to 350 degrees.
  9. Remove the plastic cover and bake the casserole for 30-35 minutes until warm.
  10. Sprinkle the remaining 1 cup of cheddar cheese on top of the casserole and set to rest for approx. 5 minutes in the oven until the cheese melts.
  11. Garnish with chopped chives and crumbled bacon before serving.
