Baked Potato Casserole
Double Baked Potato Pan - this ooey, gooey, cheesy and fully loaded will leave you asking for more!

Ingredients
- 8 potatoes about 4 kg
- 8 ounces cream cheese, softened
- 1/2 tbsp butter (1 stick)
- 2 c spicy cheddar cheese grated
- 1 pint sour cream
- Chop 2 cloves of garlic
- 1 1/2 teaspoons of salt
- 1/2 teaspoon pepper
- 1/4 c fresh onion
- 6 slices of bacon cooked crispy, drained and crumbled to the top
Instructions
- Preheat oven to 350 degrees. Wash with oil, salt and pierce the potatoes and place on a baking sheet (or directly on the baking tray).
- Bake the potatoes for 1 hour and 15 minutes, until very soft.
- Peel and chop the potatoes in a large bowl with mashed potatoes.
- Add the cream cheese, butter, 1 cup cheddar cheese and sour cream.
- Stir well. Add the garlic, salt and pepper and stir again.
- Spray a 9x13 baking dish with baking spray. Place the mashed potatoes in the pan.
- Note: The stacked material can be covered with plastic wrap and cooled until baked.
- When ready to bake, preheat the oven to 350 degrees.
- Remove the plastic cover and bake the casserole for 30-35 minutes until warm.
- Sprinkle the remaining 1 cup of cheddar cheese on top of the casserole and set to rest for approx. 5 minutes in the oven until the cheese melts.
- Garnish with chopped chives and crumbled bacon before serving.
