Creamy Cajun shrimp pasta with sausage

Ingredients

  • 1 pound. Large prawns (peeled and deveined)
  • Kosher salt and freshly cracked black pepper (to taste)
  • 1 teaspoon Cajun spices (or Creole spices)
  • 1/2 teaspoon dried Oregano
  • 2 tablespoons olive oil
  • 6 oz andouille sausage or smoked sausage (in thin slices)
  • 10 grams of fettuccine pasta
  • ½ yellow onion (thinly sliced)
  • 1 red pepper (in thin slices)
  • 4 teaspoons of Cajun spices (or Creole spices)
  • 1 teaspoon of brown sugar
  • 2-3 cloves of garlic (minced)
  • ½ cup of crushed tomatoes
  • 1 cup chicken broth sodium free
  • 1 cup of heavy cream
  • 2/3 cup grated Parmesan cheese
  • 1 tbsp parsley (finely chopped)


Instructions

  1. Toss the shrimp with salt, pepper, Cajun seasoning and oregano and cover well. Heat a large pan over medium-high heat and sift the bottom of the pan with olive oil.
  2. Add shrimp and cook for 2 minutes. Turn the shrimp over and cook for another minute or two. Then remove it on a plate and set it aside. Dry the pan with a little more olive oil, add the sausage and brown until well caramelized, approx. 4-5 minutes. Remove from the plate and set aside.
  3. Add the pasta to salted boiling water and cook until cooked.
  4. Let low heat to medium heat and add a little olive oil to the pan, add the onions, peppers, Cajun spices, brown sugar and a large pinch of salt. Cook until the onion and pepper have softened slightly and peel off any browned pieces. Add the garlic and cook until fragrant, approx. 30 seconds.
  5. Add crushed tomatoes, chicken broth and heavy cream. Bring to a boil, stir and remove all the brown pieces from the bottom of the pan, steam with a couple.
  6. After evaporation, add the parmesan and stir in the sauce. When the parmesan mixes in, add cooked dough and sausage and mix to mix and heat for 2-3 minutes. Salt and pepper to taste, finally add shrimp.
  7. Serve with chopped parsley.
